PRODUCTION AREA
This wine comes from 3 plots. Two for Clairette, planted in the 1930s and 1970s, in the Teyssonnières area, and one for Grenache Gris, located in the heart of the Dentelles de Montmirail, planted in the 1960s.
GRAPE VARIETIES
This is a blend of two different grape varieties: 70% Clairette Blanche and 30% Grenache Gris.
GEOLOGY
The soil for Clairette consists of sandy molasses, with west-facing slopes. For Grenache, the soil is composed of limestone and marl.
VINIFICATION
Exclusively from hand-harvested grapes, with sorting done in the vineyard. Direct pressing without destemming. Fermentation is carried out in barrels for half of the volume and in stainless steel tanks for the other half. Thick lees are kept in barrels, with bâtonnage performed twice a day. The part in stainless steel is kept on fine lees. Only alcoholic fermentation is carried out.
AGING
Racking from the barrel, which is then aged on fine lees. Bâtonnage is maintained twice a week. After several months, the lots are blended and aged in stainless steel tanks until bottling.
